Class Description:
Bierocks (also known as Runzas!) are a beloved Kansas City staple with deep German-Russian roots. In this hands-on class, you'll learn how to make these savory hand-pies from scratch, mastering both the traditional filling as well as a cheeseburger-inspired twist. Your guide is Executive Pastry Chef Catie Wiley, who joins us after a distinguished career as a pastry chef at several iconic patisseries and restaurants on the East Coast.

We'll start by preparing the enriched bread dough that forms the sturdy yet tender base of these portable meat pies. You'll learn the proper techniques for mixing, kneading and allowing the dough to rise to pillowy perfection. Next, you'll assemble the classic cabbage and beef filling that gives Bierocks their signature flavor. We'll explore browning the beef, sautéing the onions and cabbage, and seasoning the mixture with mustard, garlic and spices for an authentic Old-World taste.

Then we'll get creative with a cheeseburger-inspired filling - repurposing our ground beef, but adding cheddar cheese, pickles and more for a uniquely American handheld pie. You'll learn how to properly stuff and seal the dough pockets before brushing them with egg wash for a beautiful golden bake. By the end of class, you'll take home piping hot bierocks with both the classic and cheeseburger fillings to enjoy. These make incredible grab-and-go meals or savory snacks. You'll also leave with recipes and pro tips for putting new spins on this Kansas City favorite any time a Bierock/Runza craving hits!

• We provide a full refund if you need to cancel more than three weeks prior to the start of a scheduled class. You will receive an Account Credit if you need to cancel at any time within three weeks but prior to the class start time. Please note that any refund issued for classes purchased using a Gift Certificate or Account Credit will result in reinstatement of the original Gift Card or Account Credit and will bear the same expiration date. Account Credits issued for cancelations within three weeks of a class will expire one year from the date of issuance. We reserve the right to cancel a class for any reason, at any time, in which case you will receive a full refund.
